Sweet and Sour Beef

There is a company that comes to our school every couple of months, called "Books R Fun".  They set up a display of books and miscellaneous items that they sell for about half of what you would pay retail.  Two years ago I bought two cookbooks from them.
The covers intrigued me... aren't they sweet?

And then I opened the book and that was it... I was sold!  Look at the beautiful drawings...

The books were written by Roxie Kelley and Friends and illustrated by Shelly Reeves-Smith.  For the most part the recipes use every day ingredients.  There is a little story before every recipe about who it came from or how it got its name or what to serve with it.

Anyway, as I said, I've had the cookbooks for two years.  I've looked at them many times... just look at the post-it notes... but I have never made anything from these books until today.  Today I made...

It was delicious and a recipe that I will make again, but with a few modifications.  Unfortunately, I don't have any photos.  The day started out sunny but by dinner time it was gray and cloudy.  Our house is dark on gray and cloudy days and somehow using the flash for food photos makes the dishes look less than appealing.  I am seriously considering investing in a "spotlight" type lamp just so I can take photos without waiting for the sun to come out!
Here is the recipe and what I will do differently next time...

Julie's Sweet and Sour Beef
2# round steak or stew meat cut into 1" cubes
2 T. vegetable oil
16 oz. tomato sauce
2 t. chili powder
2 t. paprika
1/4 c. sugar
1 t. salt
1/2 c. vinegar (I used cider vinegar)
1/2 c. light molasses
2 c. sliced carrots
2 c. small white onions
1 green pepper, sliced
enough cooked rice for 4-6 servings
Brown meat in oil, put in slow cooker.
Mix all remaining ingredients and mix with beef.
Cook 6-7 hours on low or 4 hours on high.  Serve over rice.

My husband isn't crazy about cooked carrots so the next time I will use half the amount of carrots and I will add 1 c. of pineapple chunks.  When made following the recipe the cooked mixture is "soupy".  I added a little bit of cornstarch and water mixture just to thicken it up a bit.  This was really tasty and so easy.
